Meet the team behind Tasmanian Truffles

Brown Butter Truffle Scallops

Beautiful as a simple stand-alone entree or a great addition to salads.
Ingredients (serves 2)

  • 10 fresh scallops
  • 30 g fresh truffle
  • 1 tbsp olive oil
  • 100 g butter
  • Salt
  • Micro herbs to serve

1. Make a slit in the side of each scallop and insert one thin slice of truffle. Season scallops generously with salt.

2. Add oil to a pan over high heat and sear scallops for 30 seconds each side (or until a golden brown colour is visible on the outside).

3. In a separate frying pan, add butter over low heat until light brown. Take off the heat, and using a fine micro-plane grate 10 g of truffle into butter and whisk through.

4. To serve, generously drizzle butter over scallops and micro-plane remaining truffle as a garnish with micro herbs.

Meet Odie and Biscuit, the truffle dogs

Odie and Biscuit are the truffle dogs who are the furry heroes who deliver day in, day out, at Tasmanian Truffles. With the help of their trusty handler and truffle harvester Sherette, it's their job to snare high grade truffles from the rich and fertile soil that lies beneath the shady oaks at Australia's first truffle farm.

Biscuit is 7 year old Border Collie who began truffle training at 4 years old. Thankfully, she picked up the trade very quickly. Naturally mad keen to fetch a ball her reward for finding a truffle is to fetch the ball (she can do this all day, which is great for the farmers). Work for biscuit is basically just play time.

Odie is Beagle pup who is In the first stages of training to be a truffle dog. It's early days, but he has a great nose but isn’t quite ready for long stints in the trufferie. A pup has a short attention span so it's important that a pup is having fun when truffle hunting - we don’t want to ruin it for them early in life.
